Artichokes salad
In Italian, when you want to say that someone is ugly, you call him “Carciofo”, Artichoke. It is just the beginning of the season but I think I’m going to surround myself with a lot of those.
More they ugly, more I like them.
Ingredients (serve 4)
- 6 fresh artichokes
- Cherry tomatoes, cut into 4
- 200 gr. of black olives
- 2 scallions, finely sliced
- 1 fresh lemon
- Extra virgin olive oil
- Salt
- Pepper
Preparation
- Cut the artichokes into 2 and cook in boiling salty water until firm.
- take out of the water, cool. Then clean the external leaves of the artichokes, reaching the inner tender ones. Cut in 2 again. Clean also their stalks and slice them.
- Pure a juice of the lemon on the artichokes and set aside for 1/2 an hour.
- In a salad bowl mix all ingredients, season with extra virgin olive oil, salt and pepper.
- Set for 1/2 an hour for absorbing flavours, serve.
